Sugar Free Walnut Cake
This week we have Corrine’s unique sugar free twist on everyone’s favourite, the walnut cake.
4 oz/100g butter
2 oz/50g fruit sugar (from supermarkets)
1 tablespoon/15ml Agave syrup (from supermarkets and health food stores)
3 eggs
6 oz/self raising flour
1 tablespoon milk (or water)
2 oz/50g chopped walnuts
- Cream the butter, fruit sugar and Agave syrup until light and fluffy
- Beat in the eggs one at a time with a spoonful of flour
- Gradually beat in remaining flour and nuts
- Place mixture into greased cake tin and bake for 40/45 minutes on Gas Mark 4 electric, 180 conventional oven, 160 fan oven
- Allow to cool and decorate with icing and walnuts halves
To make the icing:
3 oz/75 fruit sugar
Approx 1/2 tablespoons/30ml water
1 drop of vanilla extract
Extra walnuts halves for decoration
- Place the fruit sugar in a mixing bowl, add the boiling water and stir add the vanilla extract and add more cold water until the mixture is thick enough to coat the back of a spoon
- The icing will not be as smooth as if using icing sugar
- If you wish to make the original version, replace the fruit sugar with 3 oz caster sugar and the agave syrup with golden syrup
- For the icing, replace the fruit sugar with 3 oz icing sugar

What is fruit sugar? I’m currently eating sugar-free and am avoiding all added sugars apart from eating whole pieces of fruit. I was really looking forward to seeing something that was entirely free from sugars.
Hi Erin, Many thanks for emailing in. I’ve found these sources on fruit sugar. https://en.wikipedia.org/wiki/Fructose and http://www.wisegeek.com/what-is-fruit-sugar.htm. Corrine’s husband is diabetic so she uses fruit sugar as an alternative to reduce the amount of sugar in his diet. I am sorry that the cake is not entirely sugar free, but free from the usual sugars. I do applaud you eating ‘sugar free’. I managed it for 3 months earlier in the year, before I lapsed! All the best Cyndy
The recipe sounds delicious, but I can’t see anywhere that tells you what temperature to bake it at.
Hi Anna we are really sorry for missing this crucial part to the fabulous recipe, the walnut cake needs to be baked for 40/45 minutes on Gas Mark 4 electric, 180 conventional oven, 160 fan oven! Hope this helps, thanks Charlotte
