Mayani’s M&M’s Birthday Cake
Our final bake-off was baked by Cyndy’s daughter Jayne, for her daughter Mayani’s 12th birthday. The falling M&M’s were a massive hit with Mayani and her friends!
Make two of the following to create this doubled-up chocolate cake:
1 1/3 cups self-raising flour
5 tablespoons cocoa powder
1 1/4 cups firmly packed brown sugar
125g butter (room temperature)
2 eggs
2 teaspoons vanilla essence
2/3 cup water
- Preheat oven to 170 degrees, then grease and line a 20 cm cake pan
- Place flour, cocoa powder and sugar into a large mixing bowl
- Add the butter and eggs to the mixture
- Beat all ingredients in the mixing bowl with electric beaters for 2-4 minutes on high or until pale and smooth
- Bake for 50 minutes, a skewer should come out clean when the cake is tested
- Leave to stand on a rack to cool
To Decorate:
Betty Crocker chocolate icing (from supermarkets)
Skewer
Two packets of M&Ms
Packet of KitKats
Ribbon
- Roughly ice one of the chocolate cakes and place the second on top
- Freeze for 20 minutes (this stops the crumbs when icing), then ice the top and sides
- Place the skewer in the centre of the double layered cake so that it sticks up from the top
- Carefully pour a packet of m&m’s around the cake, as shown in the photo, keeping them in place with melted chocolate
- Gently place KitKats around the sides of the cake (you can use wafers or whatever you would prefer) and place the ribbon around them to keep in place
- Carefully cut the corner of another packet of M&Ms and stuff with cotton wool then place on the top of the skewer
- Starting from the bottom, use melted chocolate to stick more m&m’s to the skewer, working your way up. You will need to wait a few moments between sticking the m&m’s until the chocolate hardens. Keep building this up until you can no longer see the skewer.
