This creamy-texture muesli is soooo much more delicious than the sawdust mix that is what most people in the UK know as muesli. This quantity makes enough Bircher muesli for two people for approx 1 week, but how far it stretches depends on portion size, of course. Because it is made with oats, it is a healthy breakfast and can help to lower cholesterol levels.
Ingredients:
Approx 300g jumbo oats
Approx 1 litre unsweetened pear juice
250ml cold water
500g plain yogurt (can be low-fat, fat-free or soya)
1 Dessertspoon of runny honey or a 1 dessertspoon of granulated sweetener. You can use more or less sweetening, according to taste
Method:
1. Place the oats in a large deep bowl (in a size that will fit in your fridge). Pour approx ¾ of pear juice and half the water over the oats and place in fridge for several hours or overnight to allow the oats to steep/soak.
2. Remove from fridge and add the remaining juice and water. Then add honey or sweetener and the yogurt, and stir well.
3. The Bircher muesli is now ready. Store in refrigerator; it keeps well for at least 10 days.
Serve for breakfast with a selection of berries, seeds and nuts. (Raspberries and blueberries are especially delicious. Flaked almonds and walnut pieces taste good and are good for lowering cholesterol. Try adding a few pumpkin seeds, sunflower seeds and Linseeds for crunch and good health…)
