Coleslaw is a particularly delicious salad served with cold turkey, so you may be thinking about coleslaw as a component in your Christmas or New Year meal planning.
However, you might also be having second thoughts about coleslaw because supermarket coleslaw is not an especially healthy choice; there is more mayo than veg in many varieties and often cream, too, which transforms coleslaw from quite healthy to horrifically calorific! And it is not economical, either, at around £1 for a 300g serving which is probably only enough for one.
The alternative, making coleslaw ourselves from scratch is healthy (providing we don’t add too much mayo) and definitely less expensive if you need to serve more than one or two people. But it’s a chore, frankly – all that shredding and grating of white cabbage, onions and carrots, making of dressings, seasoning….
So, here is Jan’s Cheat’s Healthier Quick Coleslaw.
Easy, quick, inexpensive, healthier*, and comfortably serves 6 to 8 people (or more as part of a buffet or bigger spread.)
Ingredients:
Approx 600g any supermarket coleslaw
2 large carrots, washed and grated
Sprig fresh parsley (optional)
Method:
- Using a big spoon, thoroughly combine coleslaw and grated carrot in a large serving bowl.
- Garnish with parsley if desired. Serve. Keeps, refrigerated, for 3-5 days.
*It becomes more healthy because the ratio of veg to mayonnaise increases dramatically. So if you eat 4ozs of this coleslaw, it’s around 3.95 ozs of veg, compared to shop coleslaw, which is 2oz veg and 2 oz of mayo!
