It might not quite be BBQ weather yet, but the sun is certainly inspiring us to jazz up our food recipes with an extra kick of flavour! We’ve been using our Simply Cook boxes to create meals inspired by world foods to spice up our meals, and wanted to share some of our favourites with you this Food Week.
Cajun Chicken with Red Pepper Sweet Potato Mash
You will need:
2 chicken breasts
300g peeled and diced sweet potato
3 diced rashers streaky smoked bacon
1 died courgette
Simply Cook box with garlic oil, Cajun seasoning and red pepper stock
Method:
- Boil the sweet potatoes for 15 minutes
- Brush half of the garlic oil and Cajun seasoning onto the chicken and fry
- Heat the remaining garlic oil in the same pan and add the bacon to fry
- Add the courgette to fry
- Mash the sweet potatoes, and stir through the red pepper stock
- Mix the bacon and courgette in to the mash, and serve
Penne alla Rustica
You will need:
200g penne pasta
350g halved cherry tomatoes
100g sliced chorizo
75ml single cream
Knob of butter
Simply Cook box with rustica paste, wild garlic and rosemary, red pepper sprinkle
Method:
- Cook your pasta
- Fry the chorizo for 2 minutes, then add a knob of butter, the tomatoes and the wild garlic and rosemary and cook for 2 minutes before stirring in the rustica paste
- Add the red pepper sprinkle to the pan, pour in the cream and mix well until the cream reduces, and serve
Thai Green Curry
You will need:
3 chopped chicken thigh fillets
400ml tinned coconut milk
120g jasmine rice
Half a cubed aubergine
1 green pepper
Simply Cook box with their green garnish, thai green paste and garlic coconut paste
Method:
- Cook your rice
- Fry the chicken and aubergine for 3 minutes before adding the garlic coconut paste and then thai green paste to fry for 1 minute, then add the green pepper to the pan
- Turn down the heat and add the coconut to your curry, and stir in the thai green garnish and cook for 5-6 minutes, and serve.
