When it’s cold outside, what’s better than warming up in the kitchen?
For a fresh take on classic winter warmers, we’ve opted for spicy and heartwarming takes on classic dishes. We’ve used some fabulous recipes using Simply Cook boxes for an easy take on restaurant-worthy meals…
BBQ Tandoori Chicken with Sweet Potato Wedges
You will need:
4x chicken thigh fillets
Natural yoghurt
Lemon
2x medium sweet potatoes
1 bag of salad
Smoked chilli blend, tandoori paste and sweet potato seasoning Simply Cook box
Recipe:
1. Cut the sweet potatoes into wedges
2. Heat the oven to 220C/200C fan/gas 7
3. Bake the potato wedges with the sweet potato seasoning and some oil in a baking tray for 20-25 minutes
4. Marinate the chicken pieces with the smoked chilli blend, tandoori paste, lemon juice and yoghurt
5. Cook the chicken in the oven for 15-20 minutes
6. Prepare your salad, add some yoghurt for dipping and serve
Mushroom Penne
You will need:
1x onion
300g sliced chestnut or button mushrooms
200ml crème fraiche
200g penne
Garlic paste, porcini stock and porcini and chive Simply Cook box
Recipe:
1. Cook your pasta
2. Whilst the pasta is cooking, heat 1tbsp of oil in a frying pan and fry the onion
3. Add the garlic paste and the mushrooms to the pan and fry
4. Reduce the heat and add the porcini stock, porcini and chive and crème fraiche to the pan and simmer gently for 2-3 minutes
5. Drain the pasta and add to the sauce before adding 2tbsp of cooking water and stirring fully
6. Serve! Why not add some chopped parsley or grated parmesan to garnish?
Spanish Paella
You will need:
150g king prawns OR 2 chicken thighs
50g chorizo
1 chopped onion
150g paella rice
1 red pepper
230g tin chopped tomatoes
Paella garnish, saffron seasoning and paella paste Simply Cook box
Recipe:
1. Pan fry the chicken until golden
2. Add the paella garnish, onion, pepper and chorizo and fry for 2 minutes
3. Mix in the chopped tomatoes and fry for 2 more minutes
4. Add the rice and saffron seasoning and stir well
5. Stir in the paella paste and 600ml of boiling water and mix well, bring back to the boil and then reduce the heat and leave to cook for 15 minutes
6. Stir in the prawns and cook for 5 more minutes
7. Serve
