Serves 2. A Stir-fry definitely works better if cooked in a wok, but you can cook it in a large frying pan if you don’t have a wok.
INGREDIENTS
1 chicken supreme (around 8oz; 250g) cut into thin strips
Approx 55g chopped garlic
150g mushrooms
Approx 260g bag of stir-fry mix (Jan used Waitrose Colourful Vegetable Ribbon Stir-fry, but any supermarket mix will do)
2 heaped dessertspoons plain flour
1 dessertspoon sesame oil or olive oil
55g noodles (optional)
10 dessertspoons soy sauce
Salt & black pepper according to taste
METHOD
About an hour before starting to cook, place the chicken strips in a small bowl with the flour and around half of the soy sauce. Stir well to coat the chicken all over and place in the fridge.
Wash and finely slice the mushrooms. To cook the stir-fry, heat around half the oil in a wok on high heat. When it is just starting to smoke, add the garlic and chicken strips. Turn the chicken strips in the hot oil for several minutes or until they look cooked (they will no longer look glossy or transparent). Remove pan from heat and transfer all the chicken and garlic pieces to a large serving dish. Return pan to heat, add remaining oil and when it is very hot add the bag of stir-fry and the mushrooms all at once. Stir, turn and toss the vegetables constantly until they begin to soften (2-4 minutes). As soon as they have softened, season with salt and black pepper to taste, add the remaining soy sauce and stir/toss well again. Now return the chicken and garlic pieces to the wok. Stir and turn all the ingredients quickly (still on high heat); when the chicken has warmed through (no more than 2 minutes) either, serve immediately on warmed plates or bowls, or transfer all the mix to a warmed serving dish and serve at the table. But either way, eat at once; stir-fry does not reheat well and is most delicious eaten hot.
You can add noodles to this mix. Let them soften in boiling water while the chicken and veg are frying; then drain them and add to the stir-fry at the same time as you return the chicken to the pan, and stir through well.
