To celebrate the start of the new series of The Great British Bake Off we have decided to do our very own!
Each Sunday find a new family favourite recipe of one of the team! Starting this week we have Cyndy’s Raspberry Baked Cheesecake!
2oz butter or margarine
12 Digestive biscuits
1lb curd cheese
¾ tumbler caster sugar
2 eggs
2 teaspoons vanilla essence
300 ml tub soured cream
2 tablespoons caster sugar
- Grease or line an 8” round cake tin, preferably with a loose base
- Heat the oven to 160 degrees, electric circotherm
- Melt the butter or margarine
- Crush the Digestive biscuits till fine crumbs
- Place the biscuit crumbs in the tin, make a well and add the melted butter
- Mix biscuit and butter together well and smooth onto the base of the tin
- Mix curd cheese with the ¾ tumbler caster sugar – you can use less if preferred
- Add the eggs and vanilla essence and mix again
- Transfer to the tin and bake for 35 minutes
- 5 minutes before cake is ready, mix the soured cream with the 2 tbsps. caster sugar and pour over the cake
- Pop back into the oven for 15 minutes
- Remove and cool thoroughly before placing in the fridge, to avoid the top cracking
- Serve plain or with raspberries on the top
- The plain cake freezes well – enjoy!
